Ingredients:

  • 2 cups heavy cream, chilled
  • 1 cup whole milk, chilled
  • 3/4 cup granulated sugar
  • 1 pinch fine sea salt
  • 1 whole vanilla bean, split and scraped
  • 1 tbsp vodka

Instructions:

  1. Combine the chilled whole milk, sugar, and salt in a mixing bowl. Whisk vigorously until the sugar is completely dissolved. Stir in the scraped vanilla bean seeds and the pod.
  2. Slowly pour in the heavy cream and the vodka. Whisk gently until the mixture is cohesive. Chill the base in the refrigerator for at least 2 hours before churning.
  3. Turn on the automatic ice cream maker and pour the chilled mixture into the frozen bowl. Churn until the ice cream reaches a soft-serve consistency, typically 20-30 minutes.
  4. Scrape the sides of the bowl with a rubber spatula. Transfer the ice cream into an airtight container, press parchment paper directly onto the surface, and freeze for at least 4 hours.
