Ingredients:

  • 3 large overripe bananas, mashed (350g)
  • 1/4 cup maple syrup (60ml)
  • 1 large egg (50g)
  • 1/3 cup melted coconut oil (80ml)
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 3/4 cup mini semi-sweet chocolate chips (130g)

Instructions:

  1. Preheat the oven to 375°F (190°C). In a large bowl, mash the bananas until smooth.
  2. Whisk in the maple syrup, egg, melted coconut oil, and vanilla until the mixture is emulsified and glossy.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
  4. Gently fold the mixture together using a spatula until just combined; do not overmix.
  5. Stir in 3/4 of the chocolate chips, ensuring they are evenly distributed.
  6. Divide the batter evenly among 12 lined muffin cups and press the remaining chocolate chips into the tops.
  7. Bake for 16–20 minutes, or until the tops spring back when touched and a toothpick inserted into the center comes out with only a few moist crumbs.
