Ingredients:
- 3 large overripe bananas, mashed (350g)
- 1/4 cup maple syrup (60ml)
- 1 large egg (50g)
- 1/3 cup melted coconut oil (80ml)
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1 tsp ground cinnamon (2g)
- 3/4 cup mini semi-sweet chocolate chips (130g)
Instructions:
- Preheat the oven to 375°F (190°C). In a large bowl, mash the bananas until smooth.
- Whisk in the maple syrup, egg, melted coconut oil, and vanilla until the mixture is emulsified and glossy.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
- Gently fold the mixture together using a spatula until just combined; do not overmix.
- Stir in 3/4 of the chocolate chips, ensuring they are evenly distributed.
- Divide the batter evenly among 12 lined muffin cups and press the remaining chocolate chips into the tops.
- Bake for 16–20 minutes, or until the tops spring back when touched and a toothpick inserted into the center comes out with only a few moist crumbs.
