Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 ½ cups / 350g)
  • ½ cup (120g) plain Greek yogurt
  • 1 large egg (50g)
  • 2 tbsp (30ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (120g) oat flour
  • ½ cup (60g) protein powder
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) cinnamon
  • ¼ tsp (1.5g) salt
  • ½ cup (85g) mini dark chocolate chips

Instructions:

  1. In a large bowl, mash the bananas until no large lumps remain.
  2. Whisk in the Greek yogurt, egg, maple syrup, and vanilla extract until the mixture is smooth and glossy.
  3. Sift in the oat flour, protein powder, baking soda, baking powder, cinnamon, and salt.
  4. Gently fold the ingredients with a spatula until flour streaks disappear; do not over-mix.
  5. Gently stir in the mini dark chocolate chips.
  6. Divide the batter evenly among 12 lined muffin cups, filling each about 3/4 full.
  7. Bake at 350°F (175°C) for 16–18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let them cool in the pan for 5 minutes before moving so the structure sets.
