Ingredients:
- 3 large overripe bananas, mashed (approx. 1 ½ cups / 350g)
- ½ cup (120g) plain Greek yogurt
- 1 large egg (50g)
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) oat flour
- ½ cup (60g) protein powder
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- ½ tsp (3g) cinnamon
- ¼ tsp (1.5g) salt
- ½ cup (85g) mini dark chocolate chips
Instructions:
- In a large bowl, mash the bananas until no large lumps remain.
- Whisk in the Greek yogurt, egg, maple syrup, and vanilla extract until the mixture is smooth and glossy.
- Sift in the oat flour, protein powder, baking soda, baking powder, cinnamon, and salt.
- Gently fold the ingredients with a spatula until flour streaks disappear; do not over-mix.
- Gently stir in the mini dark chocolate chips.
- Divide the batter evenly among 12 lined muffin cups, filling each about 3/4 full.
- Bake at 350°F (175°C) for 16–18 minutes, or until a toothpick inserted into the center comes out clean.
- Let them cool in the pan for 5 minutes before moving so the structure sets.
