Ingredients:

  • 3 large overripe bananas, mashed (approx. 340g)
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) light brown sugar, packed
  • 1 large egg (50g), room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 cup (60g) plain Greek yogurt
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Whisk in the melted butter, brown sugar, egg, vanilla, and Greek yogurt until the mixture is velvety and fully combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gently fold the dry ingredients into the wet mixture using a spatula. Mix only until no streaks of flour remain to avoid overmixing.
  5. Toss the chocolate chips with a tablespoon of the flour mixture in a small bowl, then fold them into the batter to ensure they remain evenly distributed.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
