Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- ½ cup (115g) unsalted butter, frozen
- ¾ cup (180ml) buttermilk
- 2 tbsp (30g) Greek yogurt, plain
- 1 tbsp (21g) honey or maple syrup
- 2 lbs (900g) fresh strawberries, hulled and sliced
- 2 tbsp (25g) maple syrup
- 1 tsp (5ml) lemon juice
- ½ tsp (1g) vanilla extract
- 1 cup (240ml) heavy whipping cream, chilled
- 1 tbsp (12g) powdered sugar
- ½ tsp (2g) vanilla extract
Instructions:
- In a medium bowl, toss the sliced strawberries with maple syrup, lemon juice, and vanilla. Stir gently and let them sit at room temperature while you prepare the dough.
- Preheat your oven to 425°F (218°C). Whisk together flour, baking powder, and salt.
- Use a box grater to shred the frozen butter directly into the flour mixture.
- Stir in the buttermilk, Greek yogurt, and honey until just combined. Stop as soon as the flour disappears to avoid a tough biscuit.
- Drop 6 large mounds of dough onto a parchment-lined baking sheet.
- Bake for 12–15 minutes until the tops are mahogany-colored and the edges are golden.
- Let the biscuits cool for 5 minutes, then split each biscuit in half horizontally.
- Spoon a generous portion of macerated berries over the bottom half, top with a dollop of whipped cream, and cap with the top biscuit.
