Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 cup / 225g)
  • 1/2 cup neutral oil (120ml)
  • 3/4 cup brown sugar, packed (150g)
  • 1 large egg, room temperature (50g)
  • 1 tsp vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/4 tsp salt (1.5g)
  • 1 tsp ground cinnamon (2g)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with oil or line it with parchment paper.
  2. In a large bowl, mash the bananas with a fork until no large lumps remain. Whisk in the oil and brown sugar until smooth. Beat in the egg and vanilla extract until the mixture is emulsified and glossy.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no streaks of flour remain.
  4. Fold in optional chocolate chips or nuts if using.
  5. Pour the batter into the prepared pan. Bake for 60–65 minutes until the crust is mahogany-colored and a toothpick inserted into the center comes out clean or with a few moist crumbs.
