Ingredients:
- 3 large overripe bananas, mashed (approx. 1 cup / 225g)
- 1/2 cup neutral oil (120ml)
- 3/4 cup brown sugar, packed (150g)
- 1 large egg, room temperature (50g)
- 1 tsp vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/4 tsp salt (1.5g)
- 1 tsp ground cinnamon (2g)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with oil or line it with parchment paper.
- In a large bowl, mash the bananas with a fork until no large lumps remain. Whisk in the oil and brown sugar until smooth. Beat in the egg and vanilla extract until the mixture is emulsified and glossy.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no streaks of flour remain.
- Fold in optional chocolate chips or nuts if using.
- Pour the batter into the prepared pan. Bake for 60–65 minutes until the crust is mahogany-colored and a toothpick inserted into the center comes out clean or with a few moist crumbs.
