Ingredients:

  • 2 ¼ cups (280g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • 3 tsp (12g) baking powder
  • ½ tsp (3g) salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (240ml) whole milk, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 large eggs, room temperature
  • 2 lbs (900g) fresh strawberries, hulled and sliced
  • ¼ cup (50g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (5ml) vanilla extract
  • 2 cups (480ml) heavy whipping cream, ice cold
  • ½ cup (60g) powdered sugar
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Beat softened butter and sugar together until the mixture is pale and fluffy, approximately 3 minutes.
  3. Add eggs one at a time, beating well after each, then stir in the vanilla extract.
  4. Alternately add the flour mixture and milk on low speed, mixing just until flour streaks disappear.
  5. Pour batter into the pan and bake for 20–25 minutes until a toothpick inserted in the center comes out clean.
  6. Toss sliced strawberries with sugar, lemon juice, and vanilla in a medium bowl.
  7. Let the strawberries sit at room temperature for 30 minutes to macerate.
