Ingredients:
- 2 ¼ cups (280g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- 3 tsp (12g) baking powder
- ½ tsp (3g) salt
- ¾ cup (170g) unsalted butter, softened
- 1 cup (240ml) whole milk, room temperature
- 1 tsp (5ml) vanilla extract
- 2 large eggs, room temperature
- 2 lbs (900g) fresh strawberries, hulled and sliced
- ¼ cup (50g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
- 2 cups (480ml) heavy whipping cream, ice cold
- ½ cup (60g) powdered sugar
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Beat softened butter and sugar together until the mixture is pale and fluffy, approximately 3 minutes.
- Add eggs one at a time, beating well after each, then stir in the vanilla extract.
- Alternately add the flour mixture and milk on low speed, mixing just until flour streaks disappear.
- Pour batter into the pan and bake for 20–25 minutes until a toothpick inserted in the center comes out clean.
- Toss sliced strawberries with sugar, lemon juice, and vanilla in a medium bowl.
- Let the strawberries sit at room temperature for 30 minutes to macerate.
