Ingredients:
- 2 cups (300g) ripe mango, finely diced
- 1/2 cup (75g) red bell pepper, finely diced
- 1/4 cup (40g) red onion, finely diced
- 1 medium (10g) jalapeño, seeded and minced
- 1/4 cup (15g) fresh cilantro, chopped
- 2 tbsp (30ml) fresh lime juice
- 1/2 tsp (3g) fine sea salt
- 1/4 tsp (1g) cracked black pepper
Instructions:
- Dice the mango, red bell pepper, and red onion into uniform pieces (approximately 1/4 inch). Finely mince the jalapeño, removing the ribs and seeds to control the heat level.
- Place the diced mango, bell pepper, onion, jalapeño, and chopped cilantro into a medium mixing bowl. Gently fold the ingredients together using a silicone spatula to avoid mashing the mango.
- Drizzle the fresh lime juice over the mixture and sprinkle in the sea salt and black pepper. Stir once more to coat all the produce.
- Let the salsa sit for 15 minutes at room temperature to allow the lime juice to macerate the onions and meld the flavors before serving.
