Ingredients:

  • 2 cups (300g) ripe mango, finely diced
  • 1/2 cup (75g) red bell pepper, finely diced
  • 1/4 cup (40g) red onion, finely diced
  • 1 medium (10g) jalapeño, seeded and minced
  • 1/4 cup (15g) fresh cilantro, chopped
  • 2 tbsp (30ml) fresh lime juice
  • 1/2 tsp (3g) fine sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Dice the mango, red bell pepper, and red onion into uniform pieces (approximately 1/4 inch). Finely mince the jalapeño, removing the ribs and seeds to control the heat level.
  2. Place the diced mango, bell pepper, onion, jalapeño, and chopped cilantro into a medium mixing bowl. Gently fold the ingredients together using a silicone spatula to avoid mashing the mango.
  3. Drizzle the fresh lime juice over the mixture and sprinkle in the sea salt and black pepper. Stir once more to coat all the produce.
  4. Let the salsa sit for 15 minutes at room temperature to allow the lime juice to macerate the onions and meld the flavors before serving.
