Ingredients:
- 3 medium overripe bananas, mashed (approx. 300g)
- 1/2 cup plain Greek yogurt (120g)
- 1 large egg
- 1/3 cup maple syrup (80ml)
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Instructions:
- Preheat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease thoroughly with non-stick spray.
- In a large mixing bowl, mash the overripe bananas until they reach a smooth, lump-free paste.
- Whisk the Greek yogurt, egg, maple syrup, and vanilla extract into the mashed bananas until the mixture is velvety and well-combined.
- Sift the all-purpose flour, baking soda, baking powder, cinnamon, and salt directly into the wet mixture.
- Using a silicone spatula, gently fold the dry ingredients into the wet ingredients. Stop mixing the moment no streaks of flour remain to avoid overmixing.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 18–22 minutes. A toothpick inserted into the center should come out clean or with a few moist crumbs.
