Ingredients:

  • 3 medium overripe bananas, mashed (approx. 300g)
  • 1/2 cup plain Greek yogurt (120g)
  • 1 large egg
  • 1/3 cup maple syrup (80ml)
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a 12-cup standard muffin tin with paper liners or grease thoroughly with non-stick spray.
  2. In a large mixing bowl, mash the overripe bananas until they reach a smooth, lump-free paste.
  3. Whisk the Greek yogurt, egg, maple syrup, and vanilla extract into the mashed bananas until the mixture is velvety and well-combined.
  4. Sift the all-purpose flour, baking soda, baking powder, cinnamon, and salt directly into the wet mixture.
  5. Using a silicone spatula, gently fold the dry ingredients into the wet ingredients. Stop mixing the moment no streaks of flour remain to avoid overmixing.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18–22 minutes. A toothpick inserted into the center should come out clean or with a few moist crumbs.
