Ingredients:
- 1 lb fresh strawberries, hulled and diced
- 1/4 cup granulated sugar
- 1 tsp lemon juice
- 2 cups heavy whipping cream, cold
- 14 oz sweetened condensed milk
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt
Instructions:
- Combine diced strawberries, sugar, and lemon juice in a small saucepan over medium heat.
- Simmer for 8–10 minutes, stirring occasionally, until the berries break down and the liquid thickens into a syrupy consistency.
- Remove from heat and let the strawberry reduction cool completely.
- Pour cold heavy whipping cream into a chilled bowl and beat on medium-high speed until stiff peaks form.
- In a separate bowl, whisk together the sweetened condensed milk, vanilla extract, and salt until smooth.
- Gently fold one-third of the whipped cream into the condensed milk mixture to lighten the base.
- Fold in the remaining whipped cream and the cooled strawberry reduction using a rubber spatula with a cut-and-fold motion.
- Pour the mixture into a 9x5 inch airtight freezer-safe container, smooth the top, and press parchment paper directly onto the surface.
- Freeze for at least 6 hours or overnight until firm.
