Ingredients:

  • 1 lb fresh strawberries, hulled and diced
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 2 cups heavy whipping cream, cold
  • 14 oz sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt

Instructions:

  1. Combine diced strawberries, sugar, and lemon juice in a small saucepan over medium heat.
  2. Simmer for 8–10 minutes, stirring occasionally, until the berries break down and the liquid thickens into a syrupy consistency.
  3. Remove from heat and let the strawberry reduction cool completely.
  4. Pour cold heavy whipping cream into a chilled bowl and beat on medium-high speed until stiff peaks form.
  5. In a separate bowl, whisk together the sweetened condensed milk, vanilla extract, and salt until smooth.
  6. Gently fold one-third of the whipped cream into the condensed milk mixture to lighten the base.
  7. Fold in the remaining whipped cream and the cooled strawberry reduction using a rubber spatula with a cut-and-fold motion.
  8. Pour the mixture into a 9x5 inch airtight freezer-safe container, smooth the top, and press parchment paper directly onto the surface.
  9. Freeze for at least 6 hours or overnight until firm.
