Ingredients:
- 2 cups (300g) fresh ripe mango, peeled and diced
- 1/2 cup (120ml) cold water
- 1 cup (240ml) fresh lemon juice
- 3/4 cup (150g) granulated sugar
- 1 cup (240ml) water
- 4 cups (960ml) cold water
- 6-8 fresh mint leaves
- 1 lemon, thinly sliced into rounds
- 1 fresh mango, cubed
Instructions:
- Combine the granulated sugar and 1 cup (240ml) of water in a small saucepan over medium heat. Stir constantly until the sugar crystals completely vanish and the liquid becomes clear. Remove from heat and let it cool for 5 minutes.
- Place the diced mangoes and 1/2 cup (120ml) of water into the blender. Process on high until the mixture is completely smooth and reaches an opaque, velvety consistency. Pass the puree through a fine-mesh strainer for an ultra-refined texture if desired.
- Pour the cooled simple syrup and fresh lemon juice into a large pitcher. Stir in the mango puree until the color is a uniform, vibrant gold. Gradually whisk in the 4 cups (960ml) of cold water until fully incorporated.
- Fill glasses with ice cubes and pour the mango lemonade over the ice. Garnish each glass with a slice of lemon, a sprig of mint, and a few fresh mango cubes.
