Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) ground cardamom
- 1/2 cup (120ml) mango puree
- 1/2 cup (120ml) neutral oil
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60ml) milk
- 1 cup (150g) fresh mango, finely diced
- 1 tbsp (6g) lime juice
Instructions:
- Dice fresh mango into small, uniform 1/4-inch cubes and toss with lime juice. Blend remaining mango flesh until completely smooth to create the puree.
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cardamom.
- In a medium bowl, beat the egg, then whisk in the mango puree, neutral oil, vanilla extract, and milk until the mixture forms a smooth, consistent emulsion.
- Pour the wet ingredients into the dry ingredients. Gently fold with a spatula until just combined, ensuring some streaks of flour remain to avoid overmixing.
- Gently stir in the diced mango chunks.
- Divide the batter evenly among 12 lined muffin tins.
- Bake at 375°F (190°C) for 18–22 minutes until the tops are golden brown and a toothpick inserted into the center comes out clean with a few moist crumbs.
