Ingredients:
- 1.5 cups (300g) Basmati rice
- 1 cup (240ml) full-fat coconut milk
- 1 cup (240ml) water
- 0.5 tsp (3g) sea salt
- 1 tbsp (14g) coconut oil
- 1 cup (160g) ripe mango, finely diced
- 1 tbsp (15ml) fresh lime juice
- 1 tsp (5g) lime zest
- 2 tbsp (30g) fresh cilantro, chopped
- 1 tsp (5g) fish sauce
- 0.5 tsp (2g) red chili flakes
Instructions:
- Place the basmati rice in a fine-mesh strainer and rinse under cold water until the water runs clear.
- Heat coconut oil in a medium pot over medium heat. Add the rinsed rice and stir for 1–2 minutes until the grains look translucent and smell slightly nutty.
- Pour in the coconut milk, water, and salt. Stir once to combine.
- Bring the mixture to a boil, then immediately reduce heat to low. Cover with a tight lid and simmer for 15 minutes without lifting the cover.
- Remove the pot from the heat and let it sit, covered, for 5 minutes to allow moisture to redistribute.
- Fluff the rice gently with a fork.
- Fold in the diced mango, lime juice, lime zest, fish sauce, and cilantro.
- Gently stir in red chili flakes if desired, ensuring mango pieces remain intact.
