- 1 cup (225g) unsalted butter
- 1 cup (200g) packed light brown sugar
- 1/2 cup (100g) granulated white sugar
- 1/2 cup (120g) pumpkin puree
- 1 large (50g) egg
- 1 tsp (5ml) pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 2 tsp (5g) pumpkin pie spice
- 2 cups (340g) white chocolate chips
Instructions:
- Brown the butter: Melt the butter in a saucepan over medium heat. Whisk constantly until the butter foams and small brown bits form at the bottom. Remove immediately from heat and let cool for 10 minutes.
- Cream the sugars: In a large bowl, beat the browned butter with brown and white sugars using an electric mixer until the mixture looks like wet sand and feels smooth.
- Incorporate wet ingredients: Beat in the pumpkin puree, egg, and vanilla extract on medium-high until the batter is creamy and a uniform orange-brown color.
- Whisk dry ingredients: In a separate bowl, combine the flour, baking soda, salt, and pumpkin pie spice.
- Combine: Gradually add the dry mixture to the wet ingredients. Mix on low speed just until the white streaks of flour disappear; do not overmix.
- Fold in the white chocolate chips until evenly distributed.
- Place rounded tablespoons of dough onto parchment lined sheets.
- Bake at 350°F (180°C) for 10 minutes until the edges are set.
